Scallops 

This I made working at "De 2 Heere" the dish was composed of steamed scallops with braised spinach and a cream of pumpkin, I really like the taste of scallops! It's a shame they are quite expensive!




 Salmon and Fennel

A starter I made A LOT, this was a dish we frequently sold, it's chopped salmon with marinated fennel and a deviled egg.Simple yet elegant



Chocolate soufflé

Chocolate,chocolate,chocolate. Need I say more?  The soufflé is a project of mine which has taken a lot of effort. When I finally got the recipe perfect I immediately baked dozens of them and handed them out to everyone I laid eyes on!


Fraisiere(strawberry cake)

This cake I made for my girlfriend who was allergic to chocolate,It's layered with custard cream,strawberry's and whipped cream

A glass of Cherry-chocolate

One lazy sunday afternoon  I was fooling around with chocolate when I got the idea to put layers of chocolate in a glass, it gives an extra dimension to the dessert I think,

It's made of cherry jelly with chocolate mousse and vanilla curd




Bastogne Parfait with Cremé Brulee

I have done many versions of the Parfait, but when my friend JD and I made this one, we both knew that we wouldn't be making any other parfait! If JD makes it, it's simply irresistible! 



Maccarons

It took me half a month to make these little critters, but after consulting a pastry chef at school who knew exactly how to make them I finally made the first batch of sugarbombs!



Homemade Applesauce

I like to make this when the weather is really depressing, grey skies and lots of rain. 

But when you melt the butter and chop the apples, your bad mood disappears completely!
